The process of making freeze dried rose petals starts with the freezing. Premium rose petals are selected and frozen at a temperature below -20 degrees Fahrenheit. All the air is then pumped out of the freezer and the temperature is gradually raised, allowing the ice in the petals to go directly from a solid to a gaseous stage, bypassing liquid water. It takes two weeks for the petals to gradually be brought up to room temperature, and by that point all the water originally in the petals is gone. The freeze dried rose petals remain in the shape they were in when they began the process, and will not wither or decompose, since they no longer contain any water.
